Add a bit of spice to your life with Fiery Chicken Fajitas! This is super easy to make so you can get the kids involved in the prep and who doesn’t enjoy putting together a delicious, colourful wrap.

Fiery Chicken Fajitas
Cook 10 Minutes
Ingredients
- 3 large chicken breasts, finely sliced
- 1 onion, finely sliced
- 1 red pepper, sliced
- 1 red chilli, finely sliced
- 1 heaped tbsp smoked paprika
- 1 tbsp ground coriander
- a pinch of ground cumin
- 2 garlic cloves, crushed
- 4 tbsp olive oil
- 1 lime, juiced
- 1 tsp hot sauce
- 8 flour tortillas or (Gluten Free Tortillas)
Directions
- Mix 1 heaped tbsp smoked paprika, 1 tbsp ground coriander, a pinch of ground cumin, 2 crushed garlic cloves, 4 tbsp olive oil, the juice of 1 lime and 1 tsp of hot sauce together in a bowl with a pinch of salt and pepper.
- Stir 3 finely sliced chicken breasts, 1 finely sliced onion, 1 sliced red pepper and 1 finely sliced red chilli, into the marinade.
- Heat a pan or wok until smoking hot and add the chicken and marinade to the pan.
- Keep over a medium to high heat for about 10 mins or until cooked through, using tongs or wooden spoon.
- Put the tortillas in the oven wrapped in foil to heat up and serve with the cooked chicken, salad, some fresh salsa and some sour cream.
Leftovers can be stored in an airtight container and put in the fridge for a quick lunch the next day.
