Cooler evenings call for warm pudding. Fortunately, you do not need complicated baking skills to make one.
This easy apple and berry crumble combines soft fruit with a crisp oat topping. Better still, children can help with plenty of the recipe.
What you need
- 500g cooking apples
- 300g fresh or frozen berries
- 1 tsp vanilla extract
- A squeeze of lemon juice
- 75g caster sugar
- 2 tsp cornflour
- 150g plain flour
- 100g rolled oats
- 100g cold butter
- 3 tbsp light brown sugar
- 1 tbsp golden syrup
- ½ tsp cinnamon
Make the topping
First, heat the oven to 180C or 160C fan. Add the flour, oats and cinnamon to a bowl. Then add the cold butter. Rub everything together until the mixture looks crumbly.
Next, stir in the brown sugar and golden syrup. Spread the topping onto a lined tray. Bake for about 15 minutes and stir halfway through.
Cook the fruit
An adult should peel, core and chop the apples. Put them in a saucepan with the lemon juice, vanilla and caster sugar. Cook for a few minutes until they start to soften.
Meanwhile, toss the berries with the cornflour. Take the apples off the heat and gently mix in the berries.
Build the crumble
Pour the fruit into an ovenproof dish. Scatter the topping over it. Bake for another 15 to 20 minutes until the fruit bubbles and the topping turns golden.
How can children help?
Younger children can weigh ingredients, rub butter into flour and sprinkle the topping. Adults should handle sharp knives, the hot saucepan and the oven.
Finally, serve it warm with custard, cream or ice cream.
